Lemon Squares

1 C

flour

1 1/4 C

sugar

1 stick

melted butter

1/2 t

baking powder

2

eggs, slightly beaten

2 T

fresh lemon juice

2 t

grated lemon zest

 

  1. Preheat the oven to 350û F.

  1. Mix together and press into the bottom of an 8Ó x 8Ó baking pan the flour, 1/4 C of the sugar, and the melted butter and bake for 20 minutes.

  1. Combine 1 C sugar and the rest of the ingredients

  1. Pour the liquid mixture over the baked crust and bake for an additional 25 minutes.  Chill or cool before cutting.  Dust with powdered sugar prior to serving.

 

 

Notes:
